Preparation of Harissa: Soak the wheat cereal. Boil the chicken, remove it from the broth, separate the meat from the bones and cut into pieces. Pour the soaked wheat grits into boiling broth, put the pieces of meat back and cook with occasional stirring over low heat until the products turn into a homogeneous thick mass. Prepare the dish with salt and mix. Harissa is served with onion with ground cinnamon and melted butter.

Gata

Gata is one of the exquisite Armenian desserts. What will be required for preparing Gata?

Ingredients: 300 g butter, 3 cups of flour, 1 egg, 1 protein, 1 cup of kefir, 1 teaspoon of soda, vanilla. Filling: 1 cup of baked butter, 2 cups of sugar, 3 cups of flour.

Preparation of Gata: Chop oil, flour, soda, vanillin, add eggs, kefir, knead the dough and refrigerate for several hours. Prepare several layers with a thickness of 1 - 1.5 cm, put the stuffing and roll up a roll. Spread on top of the product egg and prick with a fork. You can cut the rolls with a figure knife into pieces 3 to 4 cm wide. Bake until golden brown.

Basturma

Ingredients: beef (tenderloin) 540 g, onion and green onion 100 g each, vinegar 3% or lemon juice 60 g, greens, pepper, salt to taste.

Preparation of Basturma: Cut the tenderloin from the film, cut into pieces weighing 40-50 g, put in a china or earthenware dish, salt, and pepper, append vinegar, finely chopped onion and mix.

Then cover the dish with meat and place in a cold place for 5-6 hours. Prepared marinated meat strung on skewers and fry until cooked over hot (without flame) coals.

Khash

Since ancient times, the custom has been to eat Khash completely separate from all other dishes, and early in the morning for breakfast, or even before breakfast, on holidays.

Ingredients: 1.5 kg of beef legs, 500 g of scars, 2-3 heads of garlic, 1 radish.

Preparation of Khash: Feet scorch, scrape, rinse several times, chop lengthwise and put for a day either in running water or pour cold water on it and change it every 2-3 hours. Then rinse again, put it in an enameled basin, pour water for covering the legs with a layer of 15-20 cm and cook on low heat.

Clean, rinse, fill the scars with cold water and cook until the specific smell disappears, then pour out the broth, rinse the scars with hot and cold water, chop finely and add to the steaming legs.

Continue to boil Khash on low heat without salt, avoiding a strong boil, removing the foam until the meat is separated from the bones and the scars are soft.

Ready hot Khash salt, pour in chopped garlic or dilute crushed garlic in broth and serve separately. Armenians eat Khash with grated radish, spicy greens (basil, parsley) and lavash.

Pilaf with dried fruits

Ingredients: rice 300 g, butter 100 g, dried apricots, prunes 40 g, raisins, almonds 30 g, cloves, cinnamon, salt to taste.

Preparation of pilaf with dried fruits: Pour rice in boiling salted water and cook until the grains of rice on the outside is soft and the inside retains some elasticity.

After that, drain the rice in a colander, rinse with warm water and allow it to drain. In a deep saucepan, melt the butter, put some rice, mix it slightly, then pour the remaining rice, sprinkle with oil, cover with a lid and put on low heat for about 40-45 minutes.
Sort out the dried fruit, rinse in hot water, put in the pan with hot oil, add the cloves, peeled and finely chopped almonds, cover and lightly fry over low heat.

After that, mix the fruit with rice and serve, watering with oil and sprinkling with cinnamon.
